Little Green Peas With Fresh Mint.

I’m from the south and we do like our collards greens and kale during the holidays. We like other green vegetables as well.

1 – 16 oz. package of frozen peas. I buy the tiny and tender frozen peas in a bag.

2 tablespoons of butter or margarine

6 large, fresh mint leaves, leave them whole.

Pour  2 cups of water into a medium sauce pan, add the peas and blanch them over medium heat for about 5 minutes. Drain the water from the peas and set them aside. In a skillet add the butter and melt it over low heat, add the mint leaves and about a 1/2 teaspoon of sugar. Saute’ the mint leaves for about a minute or so, and them remove them. Add the peas to the butter/mint, and toss gently until the peas are coated with butter.

What a delicious flavor, minty and crisp. Goes so well with all the other dishes we have at Thanksgiving.
