After Thanksgiving Casserole

1 stick of butter or margarine

1/2 cup of onion, diced

1/2 cup of celery, diced

1 small can of sliced mushrooms, drained

1 can each cream of chicken soup and cream of mushroom – I use the golden cream of mushroom

3 cups of diced turkey

One teaspoon fresh parsley, minced

1 small can [ 3 oz.] chow mein noodles

Preheat oven to 350 degrees. Grease a 2-quart casserole dish and set aside. Saute’ onion and celery in butter, add mushrooms, soups, parsley and the turkey. Spread the mixture in the casserole dish and sprinkle the noodles evenly on the top. Bake for 40 minutes. I prepare this on the day after Thanksgiving and use up the left over celery and onion. This is quick to fix just in case you’re going shopping the day after turkey day.
