Summer Salsa With Fresh Herbs

Apple-Pepper Salsa

1 large apple such as Fuji or Gala, cored and chopped

2 bell peppers, any color, cored and chopped

1 clove garlic, minced

1/2 teaspoon chopped fresh mint

1/2 teaspoon chopped fresh cilantro

1/2 teaspoon chopped fresh parsley

2 tablespoons cider vinegar

1 tablespoon lime juice

Salt and pepper

In a medium bowl, toss together the apple, bell peppers, the herbs, vinegar and lime juice. Season with a little salt and pepper.

40 calories per 1/2 cup, no fat, no cholesterol, 10 grams of carbohydrate, 2 grams fiber, 6 grams sugar, 1 gram protein, 85 milligrams sodium.

Cucumber – Corn Salsa

2 ears of fresh corn, cooked in boiling water for five minutes, cool 30 minutes before using it in the recipe.

1 large cucumber, peeled and chopped

1/2 teaspoon celery seed

1 small red onion, peeled and diced

2 tablespoons chopped fresh dill

1/4 cup lemon juice

Salt and pepper, pinch of each

Carefully, cut the kernels from the ears of corn. In a medium bowl, add all the ingredients, and toss lightly. Cover and chill about an hour before serving.

45 calories per 1/2 cup, 1 gram of fat, no cholesterol, 10 grams carbohydrate, 2 grams fiber, 2 grams protein, 105 milligrams sodium.

Tarragon- Fennel Salsa

1 fennel bulb, chopped

1 medium white onion, peeled and diced

2 tablespoons white balsamic vinegar

2 tablespoons fresh tarragon, minced

1/2 teaspoon of finely diced hot pepper, such as jalapeno

Optional: 1/4 cup of diced white grapes

Combine all ingredients, toss lightly. Chill for about an hour before serving.

40 calories per 1/2 cup, no fat, no cholesterol, 8 grams carbohydrates, 2 grams fiber, 1 gram protein, 110 milligrams sodium.
