Salmon Filet – moist and flavorful
1 pound salmon filet
1/4 cup Kraft Miracle Whip
1/2 teaspoon fresh or dried dill
Preheat oven to 375 F.
For easy clean-up line a baking sheet with foil and spray with cooking spray. Place the filet on the baking sheet. Spread the Miracle Whip evenly over the filet. Sprinkle dill over the Miracle Whip. Bake for 20 minutes or until fish flakes with fork.
Meatloaf – something a little different, but delicious.
2 pounds of lean ground beef
1 envelope onion soup mix
1/2 cup barbecue sauce
1/2 cup Stove Top Stuffing
1 egg
1/4 cup water
In a large bowl, mix together all ingredients. Shape into a loaf and place it in a baking dish. Bake in a preheated 375 oven for about an hour and 15 minutes. Serves 10.
Baked Potato Wedges With Herbs
3 large baking potatoes, baked and allowed to cool completely
On a foil-lined baking sheet, grease the foil with olive oil. Cut the potatoes in thick wedges and place them on the baking sheet. Mix together 1/2 teaspoon sea salt, 1/2 teaspoon each: dried parsley, rosemary, basil and oregano. Stir to blend the herbs and salt and sprinkle them evenly over the wedges. Bake in a preheated 375 oven until the oil sizzles. Serve warm
Vegetable Medley
2 cups of fresh broccoli florets
1 cup of carrot sticks
2 cups of fresh cauliflower – chopped
1/2 teaspoon of ground ginger
2 small chicken bouillon cubes
In a saucepan, add vegetables, ginger and bouillon cubes. Add just enough water to barely cover the vegetables. Place a lid on the sauce pan and cook over medium heat until vegetables are tender.
Busy Day Fruit Salad
1 – 16 ounce can crushed pineapple – undrained
1 – 16 ounce can fruit cocktail – drained
2 small cans mandarin oranges – drained
1 large box of Jell-O instant pudding mix [ vanilla ]
1 – 8 ounce container of Cool Whip, thawed
1 cup chopped walnuts
1 cup shredded coconut
Mix first 4 ingredients in large bowl, add cool whip, stir to blend. Pour into a glass bowl. Sprinkle with walnuts and coconut. Chill 2 hours before serving. Spoon into serving bowls and garnish with fresh mint.
Turtle Cake
1 box of German Chocolate cake mix
1 stick unsalted butter
1/2 cup evaporated milk
1- 10 ounce bag Kraft caramels [ unwrapped and at room temperature ]
1 cup chocolate chips
1 cup chopped pecans
Prepare cake mix according to package directions on box. Spray a 9 x 13 baking pan with Baker’s Joy. Pour half the batter into the pan and bake in a pre-heated 350 oven for 15 minutes. Remove the cake from the oven. In a sauce pan, add the caramels, butter and milk. Heat and stir over medium heat until the caramels are melted. Pour caramel mixture evenly over cake. Sprinkle chocolate chips and pecans evenly over caramels. Pour remaining cake batter over cake and continue baking for another 20 minutes. Frost when cake has cooled. This is a rich cake, and a dollop of whipped topping is more than enough.
