Salsa and Cilantro Dressing
1/2 cup thick and chunky salsa [ fresh or bottled ]
1/2 cup of French dressing
2 tablespoons of finely chopped fresh cilantro
In a glass bowl, mix all ingredients with a spoon. Cover and chill for 2 hours. Serve on salads or mixed greens. Use as a dip for tortilla chips or raw vegetables.
4 cups of Bisquick or Jiffy Mix
2 cups of milk
1/2 teaspoon of fresh parsley, minced
1/2 teaspoon fresh thyme, minced
1/2 teaspoon fresh chives, minced
Combine all ingredients and mix well. Let dough “rest” for 30 minutes to allow the flavors to blend.
With floured hands, shape dough into dumplings about the size of golf balls. Drop dumplings into bubbling chicken stock, or canned beef stew. Cover and cook on low for about 15 minutes.
Fruity and Citrusy Bouquet Garni
2 parsley stalks
3 thyme sprigs
2 bay leaves
3 twists of lemon peel
3 twists of orange peel
Place ingredients in a square of cheesecloth. Tie up with kitchen twine or string. Use in fish stock,chicken stock, cooking or steaming vegetables or seafood. Simmer the bouquet garni in water and use the flavored water for cooking rice or pasta dishes.
